The three major fishing companies with own steel hull vessels are specialized in the sea catch of tuna, shrimps, catfish and exotic species. Their vessels have their own primarily processing on board, like gutting and chilling or freezing. Shrimp trawler vessels even have the possibility to add polyphosphates during processing on board. These companies also have their own processing plants on shore. Fishing companies that do not have a private plant, usually work closely together with these bigger companies although they own their own vessels. In the onshore processing plants, the product is graded, re-processed if necessary (filleting for example) and packed for the national and international market according to customers’ requirements. The smaller artisanal boats do not have a suitable processing facility on board, so they bring the fish and shrimps on shore on a daily basis. They sell their fresh product to bigger processing companies or to local markets.
