Aquaculture operators that focus on the production of Penaeus monodon do very little handling or pre-processing. During harvesting the shrimp are immediately chilled on ice and placed in plastic containers. Smaller producers tend to sell the majority of their produce to middlemen that focus on sales to regional markets while the better quality grades will be transported to interested processors. A refrigerated truck will immediately transport the export quality shrimp to the processing plant where further processing will take place.
