Aquaculture operators that focus on the production of milkfish for export do very little handling or pre-processing. In most cases, fish are immediately chilled on ice and placed in plastic containers during harvesting. Fish are graded and low quality fish will be sold off on the local market by third party resellers, while the better quality grades will be transported to the processor. A refrigerated truck owned by the processing plant is standing by during harvesting and will immediately transport the export quality fish to the processing plant where further processing will take place.
