Most aquaculture operators do very little handling or pre-processing during harvesting and fish are only graded and immediately chilled on ice. Different quality grades and sizes are often sold to different buyers. These buyers are middlemen that sell the fish to local and regional markets, street vendors and other interested buyers. Tilapia produced by larger producers undergoes the same post-harvest procedures except that a refrigerated truck owned by the company immediately transports the fish to the processing plant where further processing takes place.
